  • 10 large eggs
  • 1 onion
  • 2 red chili peppers
  • 1 green chili pepper (preferably Korean Cheongyang chili)
  • 10 stalks of chives
  • 2 tsp vinegar
  • 1 tsp salt

Marinade

  • 200ml soy sauce for braising
  • 200ml water
  • 100g sugar
  • 100ml corn syrup (or rice syrup)
  • 1 Tbsp roasted sesame seeds

Cooking Instructions

First, let’s prepare the vegetables that will give our soy-marinated eggs their fantastic flavor. Finely mince the red and green chili peppers after removing the seeds. Cut the chives into about 1-2 cm lengths. Peel the onion and dice it into roughly 0.5 cm cubes for a pleasant texture.

Now, let’s create the irresistible marinade. In a pot, combine 200ml of soy sauce for braising, 200ml of water, 100g of sugar, and 100ml of corn syrup. Heat over medium-low heat, stirring until the sugar is completely dissolved. Once it boils, turn off the heat and stir in the prepared minced vegetables (onion, red chili, green chili, chives) and 1 Tbsp of roasted sesame seeds. The key to this marinade is the perfect balance of sweet and savory, so feel free to adjust the sugar or soy sauce to your taste.

Time to boil the eggs! Fill a pot with plenty of water and add 2 tsp of vinegar and 1 tsp of salt. Once the water comes to a rolling boil, gently lower the eggs (which have been at room temperature for at least an hour) into the water. Be careful not to crack them. Maintain medium heat and boil for 6 to 6 minutes and 30 seconds. For a soft, jammy yolk, aim for 6 minutes; for a firmer yolk, go for 6 minutes and 30 seconds.

Immediately after boiling, transfer the cooked eggs to a bowl filled with ice-cold water. This step stops the cooking process, ensuring your yolk is perfectly cooked, and makes peeling the eggs significantly easier. Let them cool in the ice bath for at least 10 minutes.

Carefully peel the cooled eggs while they are still in the ice water or after draining. Peeling them in cold water helps remove the thin membrane along with the shell, resulting in beautifully smooth eggs. Once peeled, gently place the eggs into the prepared marinade, ensuring they are submerged in the liquid.

Now it’s time to let your addictive soy-marinated eggs mature. Cover the container tightly and refrigerate for at least one full day. The longer they marinate, the deeper and more delicious the flavor becomes as the eggs absorb the savory sauce. While they are good to eat right away, a day’s rest truly elevates their taste!
