Steamed Eggs in Soy Marinade for a Delicious Side Dish

Eggs have been on sale at the supermarket lately, so I decided to make the popular ‘Marinated Eggs’. Since three out of my five family members don’t enjoy soft-boiled eggs, I opted for steamed eggs this time! Steamed eggs offer a chewier texture than regular boiled eggs, are great for meal prep, and worry-free to store. Let’s make these delicious marinated steamed eggs together – they’re sure to be a hit!

Main Ingredients
  • 10-15 eggs
  • 1 medium onion
  • 1 stalk of green onion
  • 3 chili peppers (use Cheongyang chili peppers for extra spice)

Marinade
  • 1 cup soy sauce (approx. 180ml)
  • 1 cup water (approx. 180ml)
  • 1/2 cup sugar (approx. 90ml)
  • 1 tablespoon vinegar
  • 2 tablespoons sesame seeds

Cooking Instructions

Step 1

First, prepare 10-15 eggs. It’s best to steam them for at least 20 minutes using the ‘Multi-Steam’ function on a pressure cooker. Once steamed, rinse them immediately with cold water to cool them down, then gently peel and set them aside.

Step 2

While the eggs are steaming, wash and peel the medium-sized onion. Dice it into roughly 1cm cubes. This size will allow the marinade to penetrate nicely for maximum flavor.

Step 3

Chop the green onion into bite-sized pieces. If you enjoy a spicier kick, finely chop the 3 chili peppers after removing the seeds. This will add a pleasant heat without being overwhelming.

Step 4

Now, let’s make the soy marinade. Pour about 80% of a paper cup (approx. 180ml) of soy sauce into a bowl. Add an equal amount of water, 1 cup (approx. 180ml). Maintaining this 1:1 ratio of soy sauce to water is key.

Step 5

Prepare the sugar for sweetness. Measure out 1/2 cup (approx. 90ml) of sugar using a paper cup. Feel free to adjust the amount of sugar to your personal preference.

Step 6

Finally, add 1 tablespoon (15ml) of vinegar for a touch of acidity and 2 tablespoons (30ml) of sesame seeds for nutty flavor. Your delicious soy marinade is now complete! All the components are ready.

Step 7

Place the steamed eggs, diced onion, chopped green onion, and chili peppers into a clean glass container. Ensure the eggs are submerged in the marinade. If they float too much, you can place a heavy plate on top to keep them submerged.

Step 8

Refrigerate this mixture for at least one day to allow the flavors to meld. You’ll have incredibly flavorful marinated steamed eggs! Although the eggs are cooked, the savory marinade elevates their taste, making them a perfect side dish for rice. Don’t miss out on the delightful chewy texture and umami-rich marinade!
