Tart Dough

  • 2 Tbsp sugar
  • 1 Tbsp lemon juice

Decoration

  • 1 Tbsp strawberry jam
  • 1 Tbsp lemon juice
  • 1 Tbsp powdered sugar, for dusting

Let’s start by making the tart dough. In a bowl, combine the sifted cake flour, powdered sugar, salt, and slivered almonds. Add the cold, cubed butter and rub it into the dry ingredients using your fingertips or a pastry blender until the mixture resembles coarse crumbs. For a cleaner process, you can place the ingredients in a resealable bag and knead it there. Stir in the vanilla extract and coffee essence, then add the egg yolk. Gently mix until the dough just comes together. Be careful not to overwork the dough.

Once the dough is formed, flatten it into a disc, wrap it in plastic wrap or place it in a zip-top bag, and refrigerate for at least 30 minutes. This chilling period allows the gluten to relax, making the dough easier to handle and ensuring a crispier crust.
