  • 1/2 cup all-purpose flour (approx. 50g)
  • 1 egg
  • 4-5 Tbsp canola oil (approx. 60-75ml)

  • 700ml cold water
  • 3 Tbsp soju (Korean distilled spirit)

Cooking Instructions

Allow the frozen shrimp to thaw naturally, or soak them briefly in lukewarm water. Once thawed, soak the shrimp in a mixture of cold water (700ml) and soju (3 Tbsp) for 5-10 minutes to eliminate any fishy odor. Rinse them gently under running water and pat them thoroughly dry with paper towels.

Carefully remove the heads from the shrimp and peel off the shells. It’s also important to remove the sharp tip at the end of the tail (the ‘water gun’) to ensure a pleasant eating experience.

Using a knife, make a cut about halfway through the body of each shrimp, lengthwise. Don’t cut them completely in half; this allows you to spread them open for shaping. Gently insert a skewer into the cut to remove the dark vein (intestine). Removing the vein results in a cleaner texture.

Lightly rinse the deveined shrimp under running water. Then, meticulously pat them dry with paper towels to prevent oil splatter while frying.
