Step 1

Gather all your ingredients for the cookies: 90g low-gluten flour, 45g unsalted butter softened to room temperature, 50g powdered sugar, 1 egg yolk, 20g aged cheddar cheese powder, and a pinch of salt. Accurate measurement is the first step to delicious cookies.

Step 2

Place the softened unsalted butter in a mixing bowl. Using a whisk or spatula, cream the butter until it reaches a smooth, creamy consistency, similar to frosting. Ensure there are no lumps of butter for a better texture.

Step 3

Add the powdered sugar to the creamed butter and mix well. Then, add the egg yolk and continue mixing until the mixture is smooth and well combined, ensuring it doesn’t separate.

Sift in the low-gluten flour, aged cheddar cheese powder, and salt. Gently mix the ingredients until they just start to come together, being careful not to overmix.
