Making Aged Kimchi and Bacon Rice Rolls
This morning, I prepared Aged Kimchi and Bacon Rice Rolls. The deep flavor of well-fermented aged kimchi meets the richness of bacon for a fantastic harmony. The slightly greasy texture of bacon is balanced by the sourness of aged kimchi, creating a delicious dish that is both savory and crisp. It’s a satisfying meal on its own, and also perfect as a special snack for kids or as part of a thoughtful bento box.
Main Ingredients- 6 slices of bacon
- 6 sheets of aged kimchi (rinsed to remove excess seasoning and squeezed dry)
- 1/2 bowl of cooked rice (warm rice)
Seasoning & Garnish- 1/2 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds (or ground sesame seeds)
- 1/2 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds (or ground sesame seeds)
Cooking Instructions
Step 1
First, prepare all the ingredients for the rice rolls neatly. Gently rinse the aged kimchi under running water to wash away excess seasoning, then firmly squeeze out all the moisture with your hands. This step is crucial for the final taste.
Step 2
Take about half a bowl of warm cooked rice and place it in a mixing bowl. Add half a tablespoon of sesame oil for a nutty aroma and half a tablespoon of toasted sesame seeds. Gently mix with a spatula, being careful not to mash the rice grains, so that each grain is infused with the delicious flavors.
Step 3
Lay out a sheet of the rinsed and squeezed aged kimchi. Trim off the thick stem part of the kimchi leaf with a knife to make it easier to roll. Place a bite-sized portion of the prepared rice mixture onto the kimchi leaf, and then carefully roll the kimchi around the rice.
Step 4
With the kimchi and rice rolled together, carefully lay a slice of bacon over it. Wrap the bacon around the kimchi roll, ensuring it’s wrapped snugly. The bacon will help hold everything together.
Step 5
Heat a non-stick pan over medium-low heat without adding any oil. Place the bacon-wrapped rice roll seam-side down in the pan. This prevents the bacon from unraveling as it cooks.

As the bacon starts to turn golden brown, use tongs to carefully turn the roll, ensuring all sides are evenly cooked to a delicious, slightly crispy texture. You’ll soon be enticed by the wonderful aroma filling your kitchen.
Step 7
Once the bacon is golden and crisp all around, remove the rolls from the pan and let them cool slightly for a minute or two. Slicing them while too hot might cause them to fall apart, so let them cool a bit before cutting them into bite-sized pieces, such as in half.
