For the Aged Soy Sauce- 100ml Water
- 100ml Dark Soy Sauce
- 1 piece Dried Kelp (5cm*5cm)
- 5cm Green Onion (white part)
- 1/2 Onion
- 1 Korean Chili Pepper
- 2g Bonito Flakes
- 1 Tbsp Sugar
Cooking Instructions
Step 1
First, let’s prepare the aged soy sauce for a deep flavor. In 100ml of fresh water, soak a piece of dried kelp (about 5cm x 5cm) for at least 1 hour in the refrigerator. The kelp will absorb the water and release its umami.
Step 2
Next, prepare the vegetables to add more flavor. Finely chop 5cm of the white part of a green onion, 1/2 onion, and 1 Korean chili pepper for a hint of spice. The finer the vegetables are chopped, the better their flavor will infuse into the soy sauce.
Step 3
In a large bowl or airtight container, pour 100ml of dark soy sauce. Carefully strain the kelp-infused water into the soy sauce. Add all the chopped green onion, onion, and Korean chili pepper. The fresh aroma of the vegetables will permeate the soy sauce.

To further enhance the umami, let’s add some special ingredients. Add 2g of bonito flakes and 1 tablespoon of sugar, then mix well. Bonito flakes provide a smoky flavor and deep savoriness, while sugar will gently harmonize the flavors of all the ingredients.

Now for the crucial aging step! Seal the container tightly with a lid or plastic wrap, and let it age slowly in the refrigerator for one full day. During this time, all the flavors will meld deeply, creating a wonderfully flavorful aged soy sauce.

And finally, the wait is over! Generously drizzle the special aged soy sauce you’ve carefully prepared over a bowl of warm cooked rice. Top it with a fresh fried egg (a soft-boiled egg is recommended!). The rich yolk mixing with the aged soy sauce is truly exquisite. Enjoy your delicious meal!
