Chicken Drumstick Coating & Tteokbokki Ingredients- 1 Tbsp tempura flour
- 1 Tbsp curry powder
- 2 Tbsp honey or corn syrup (for tteokbokki sauce)
- 1 cup tube tteok (rice cakes)
- A little cooking oil (for pan)
Cooking Instructions
Step 1
First, finely mince the Cheongyang peppers that will add flavor to the chicken drumsticks. Wash them, remove the stems, and chop very finely. Feel free to adjust the amount if you prefer it spicier.
Step 2
Prepare the delicious marinade for the chicken drumsticks. In a wide bowl, combine the braising soy sauce, honey, corn syrup, sugar, cooking wine, the minced Cheongyang peppers from earlier, minced garlic, and black pepper. Stir well until all ingredients are thoroughly mixed, creating a deep and rich sauce.
Step 3
Before cooking, score the chicken drumsticks 2-3 times across the flesh to ensure even cooking. Wash the potatoes thoroughly and cut them into quarters. Place the chicken drumsticks and potatoes into the bowl with the marinade. Reserve about 2 tablespoons of the marinade for later, then pour the rest over the drumsticks and potatoes, tossing to coat evenly. Let it marinate for at least 1 hour for the best flavor infusion.
Step 4
Remove the marinated chicken drumsticks from the bowl after 1-2 hours and place them in a resealable bag or plastic bag. Add 1 tablespoon of tempura flour and 1 tablespoon of curry powder, then shake the bag well to coat the drumsticks evenly with a light layer of flour. This step ensures extra crispiness when air-fried.
Step 5
Now, preheat your air fryer. Arrange the flour-coated chicken drumsticks and potatoes in the basket. Cook using the ‘whole chicken’ setting twice, flipping them halfway through, until the surface is golden brown. Ensure even cooking by flipping them midway. If you notice any undercooked parts, reduce the temperature to 150°C (300°F) and continue cooking for another 20 minutes, flipping occasionally, to ensure they are cooked through and tender.
Step 6
Ta-da! Look at these golden brown, appetizing chicken drumsticks and fluffy cooked potatoes. They are delicious as they are, but we’re going to give them a quick stir-fry in the remaining sauce to enhance their flavor. This step will elevate the crispy-tender appeal of the drumsticks even further.
Step 7
Heat a little cooking oil in a pan over medium heat. Add 1 teaspoon of the reserved marinade and the tube tteok (rice cakes), and stir-fry. Once the tteok start to soften slightly, add the air-fried chicken drumsticks to the pan. Pour in the remaining 1.5 tablespoons of marinade and 2 tablespoons of honey or corn syrup. Gently toss everything together until the chicken and tteok are evenly coated with the glossy sauce. Your flavorful chicken drumstick tteokbokki is ready!
Step 8
The perfectly cooked drumsticks, chewy tteok, and tender potatoes come together to create a sensational taste experience in your mouth! This is a winning combination that everyone from kids to adults will love. It’s truly a taste of heaven! ^^
Step 9
Now, let’s make the sandwiches. Spread a thin layer of strawberry jam on one side of the bread slices. Then, layer with sliced cheese, mozzarella cheese, and sliced ham. Top with another slice of bread to complete the simple yet delicious sandwich filling.
Step 10
Whisk together milk and eggs to create an egg wash. Dip the prepared sandwich bread slices into the egg wash, coating both sides. Cook over low heat with a lid on, flipping occasionally until golden brown on both sides, or pan-fry and then microwave for 1-2 minutes. This creates a warm and soft French toast-style sandwich. Adjust cooking or heating time to your preference.
Step 11
Arrange the finished sandwiches attractively on a plate. Finally, dust with powdered sugar using a sieve for a sweet and beautiful presentation. This will especially appeal to children.
Step 12
Lastly, prepare a fresh salad. Feel free to use various vegetables you have in your refrigerator, such as tomatoes, red onions, cucumbers, and chicory. Drizzle a zesty yuzu dressing over the vegetables for a refreshing accompaniment. This completes a perfect meal!
