Today, I’m sharing a recipe for crispy and juicy drumettes, a dish loved by everyone! With just an air fryer, you can enjoy delicious drumettes at home that rival those from restaurants. They’re perfect as a beer snack or a delightful treat for kids!
Basic Ingredients- 600g chicken drumettes
- 600ml milk
Marinade Ingredients- 2 Tbsp mirin (cooking wine)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp salt
- 2.5 Tbsp olive oil
- 2 Tbsp curry powder
- A pinch of black pepper
Optional Ingredients (For Extra Flavor!)- 2 cloves whole garlic ~ to taste

Step 1
First, let’s prepare the chicken drumettes properly.

Thaw frozen drumettes completely. Once thawed, soak the drumettes in 600ml of milk for about 20-30 minutes. This step is crucial for removing any gamey smell from the chicken. Afterward, rinse them thoroughly under cold running water several times. Drain them well in a sieve until no excess water remains.

In a large bowl, place the drained drumettes. Add all the marinade ingredients: 2 Tbsp mirin, 1/2 Tbsp minced garlic, 1/2 Tbsp salt, 2.5 Tbsp olive oil, 2 Tbsp curry powder, and a pinch of black pepper. Gently massage the ingredients into the drumettes, ensuring they are well coated. Let the drumettes marinate for at least 30 minutes to allow the flavors to meld.
Step 4
While the drumettes are marinating, use a skewer or a fork to prick the skin all over. This helps the marinade penetrate deeper into the meat, resulting in a more flavorful and tender drumette. It also aids in achieving that desirable crispy exterior.

Now, arrange the marinated drumettes in the air fryer basket in a single layer, making sure they don’t overlap. If using, add the whole garlic cloves to the basket. They will roast alongside the drumettes and add a wonderful aroma.

Set the air fryer to 200°C (392°F) and cook for the first 10 minutes. After 10 minutes, carefully open the air fryer and check the color of the drumettes. They should start to turn a nice golden brown.

Flip all the drumettes over to the other side. Continue to cook at 200°C (392°F) for another 10 to 15 minutes. The exact cooking time may vary depending on the size of the drumettes and your specific air fryer model.
