Main Ingredients- Pork Neck 500g
- Cheongju (Rice Wine) 1.5 Tbsp
- Black Pepper, a pinch
Gochujang Sauce- Gochujang (Korean Chili Paste) 1 Tbsp
- Soy Sauce 1 tsp
- Mirin (or Rice Wine) 1 tsp
- Sugar 1 tsp
- Oligosaccharide 1 tsp
- Minced Garlic 1 tsp
- Ginger Powder 1/8 tsp (or a little ginger juice)
- Sesame Oil 1 tsp
- Black Pepper, a pinch
- Gochujang (Korean Chili Paste) 1 Tbsp
- Soy Sauce 1 tsp

Cooking Instructions
Step 1
First, pat the pork neck slices dry with paper towels to remove excess moisture. Then, sprinkle them evenly with 1.5 Tbsp of Cheongju (rice wine) and a pinch of black pepper to marinate. Let it rest for about 10 minutes; this helps remove any gamey odors and tenderizes the meat.
Step 2
Line your air fryer basket with parchment paper and place the rack on top. Preheat the air fryer to 180°C (350°F) for 5 minutes. Once preheated, place the marinated pork neck on the rack and roast for 13 minutes at 180°C for the first cook.

About 7 minutes into the first cooking cycle, open the air fryer and flip the pork neck slices to ensure even cooking on all sides.

While the pork is roasting, let’s prepare the delicious gochujang sauce. In a small bowl, combine 1 Tbsp Gochujang, 1 tsp soy sauce, 1 tsp mirin, 1 tsp sugar, 1 tsp oligosaccharide, 1 tsp minced garlic, 1/8 tsp ginger powder, 1 tsp sesame oil, and a pinch of black pepper. Mix well until smooth to create the sauce.

As the first roasting stage nears completion, check the doneness of the pork neck in the air fryer. Prepare to move to the next step when it’s almost cooked through.
Step 6
Now, generously brush the prepared gochujang sauce onto both sides of the pork neck. Return the sauced pork to the air fryer and cook for an additional 4-5 minutes at 180°C (350°F).
