- 2 Tbsp Cooking oil (vegetable oil)
- 1/2 tsp Salt
- 2 Tbsp Mirin (or rice wine/sake)
- Pinch of Black pepper

Step 1
Submerge the pork ribs in cold water for 1 hour to bleed out any excess blood. This crucial step helps eliminate any gamey odors, ensuring a clean and delicious grilled flavor.

After bleeding, thoroughly pat the pork ribs dry with paper towels. Removing excess moisture is important for better marination and to prevent oil splattering during cooking.

To help the seasonings penetrate deeply and ensure even cooking, make shallow cuts between the bones with a knife. Be careful not to cut too deep, as this can cause the juices to escape.

In a bowl, combine the prepared pork ribs with 2 tablespoons of cooking oil, 1/2 teaspoon of salt, 2 tablespoons of mirin, and a pinch of black pepper. Gently massage the seasonings into the ribs with your hands, ensuring they are evenly coated. Proper marination is key to flavor.

Cover the marinated ribs with plastic wrap or place them in an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld. For an even richer taste, marinate for about 1 hour if time permits.

Arrange the marinated pork ribs in the air fryer basket, making sure they are not overlapping. Place them in a preheated air fryer set to 180°C (350°F) and cook for 15 minutes. Cooking time may vary depending on the size of the ribs and your air fryer model.

After 15 minutes, flip the ribs over and cook the other side for another 15 minutes at 180°C (350°F) until golden brown. This ensures they are crispy on the outside and tender on the inside. To check for doneness, insert a skewer or fork into the thickest part; the juices should run clear.
