Time flies, and we’re already on the fourth day of 2022! Today, I’m sharing a delightful snack recipe: Air Fryer Rice Cake Skewers with Fish Cake! While plain grilled rice cakes are delicious, wrapping them in savory fish cake takes them to a whole new level. The combination of chewy rice cakes and tender fish cake… just thinking about it makes my mouth water! Let’s make these chewy rice cake and fish cake skewers together. Aren’t they just adorable?

Ingredients
  • 4 sheets of square fish cakes (with vegetables)
  • 4 pieces of gara-tteok (Korean rice cake)
  • 4 stalks of chives
  • 1 tablespoon cooking oil

Cooking Instructions

Step 1

First, let me show you all the ingredients you’ll need to make these chewy and delicious rice cake skewers with fish cake!

Step 2

Let’s start making this rice cake and fish cake skewer that everyone, young and old, can enjoy! Prepare 4 stalks of chives. Since we’re making 4 skewers, 4 stalks of chives will be just enough.

Step 3

Wash the 4 stalks of chives thoroughly under cold running water. If you don’t have chives, you can also use minari (water dropwort) or green onions for a similar delicious result.

Step 4

Now, we’re going to briefly blanch the chives. Fill a pot with an adequate amount of water and turn the heat to high.

Once the water in the pot starts boiling vigorously…

Add the 4 stalks of washed chives and blanch for just 30 seconds! Blanching only 4 stalks makes them look a bit funny, doesn’t it? ^^

After 30 seconds, take the blanched chives out…

…and place them in a bowl. See how cute the 4 chives look now? These chives will be used to tie the rice cake and fish cake together, so set them aside.

Now, let’s make the chewy rice cakes crispy. Place the 4 rice cakes in the air fryer basket.

Brush the top of the rice cakes evenly with cooking oil. You can certainly grill them without oil, but brushing with oil will give you a crispy exterior and a moist interior. It creates the perfect rice cake! ^_^

Bake the shiny rice cakes at 180°C (350°F) for 10 minutes. Please note that cooking times and temperatures may vary slightly depending on your air fryer model, so it’s a good idea to check the rice cakes halfway through.

When you air fry rice cakes, they tend to puff up a bit.

Now, let’s wrap the rice cakes in a cozy blanket of fish cake! Lay out one sheet of square fish cake, preferably one with plenty of vegetables.

Place one of the freshly air-fried rice cakes on top of the fish cake.

Then, roll the fish cake around the rice cake tightly.

If you leave it like this, the fish cake might unravel! That’s where our blanched chives come in. Use them to tie a cute knot around the fish cake, securing it in place.

Repeat the same process for the remaining 3 rice cakes: wrap them in fish cake and tie them with the blanched chives.

Finally, insert a wooden skewer into each one for easy eating. And there you have it – your simple and delightful rice cake and fish cake skewers are ready!
