- Chopped nuts or parsley flakes (optional, for topping)
Spicy & Sweet Tteokkochi Sauce- 5 Tbsp Corn syrup (or rice syrup)
- 2 Tbsp Sugar
- 1 Tbsp Soy sauce
- 1 Tbsp Minced garlic
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Ketchup
- 5 Tbsp Corn syrup (or rice syrup)
- 2 Tbsp Sugar
- 1 Tbsp Soy sauce
- 1 Tbsp Minced garlic
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Ketchup
Cooking Instructions
Step 1
First, lightly rinse the 500g of tteokbokki tteok (rice cakes) under running water. Soaking them in water for a short while can help prevent them from sticking together later.
Step 2
Let’s make the delicious tteokkochi sauce! In a small saucepan, combine 2 Tbsp sugar, 1 Tbsp soy sauce, 1 Tbsp minced garlic, 5 Tbsp corn syrup, 1 Tbsp gochujang, and 2 Tbsp ketchup. Whisk everything together until well combined. Then, simmer over low heat, stirring occasionally, for about 10 minutes until the sauce thickens and the flavors meld beautifully.
Step 3
Take the soaked rice cakes and blanch them in boiling water for just about 30 seconds. Be careful not to overcook, as they can become too soft. Immediately drain the blanched tteok and rinse them under cold water to maintain a chewy texture.
Step 4
To prevent the blanched rice cakes from sticking together, heat 2 Tbsp of cooking oil in a pan. Add the tteok and toss them gently until each piece is coated with oil. This oil coating will help them crisp up nicely in the air fryer.
Step 5
Arrange the oil-coated rice cakes in a single layer in the air fryer basket, making sure they don’t overlap. Air fry at 180°C (350°F) for about 10 minutes. They should become crispy on the outside and chewy on the inside. Flipping them halfway through can ensure even cooking.
Step 6
Once the rice cakes are nicely air-fried, remove them from the air fryer and thread them onto wooden skewers at regular intervals. Skewering them makes them easy to coat with sauce and to eat.
Step 7
Generously brush the pre-made spicy and sweet tteokkochi sauce all over the skewered rice cakes. Using a pastry brush can help apply the sauce evenly and neatly.
Step 8
Finally, sprinkle your favorite toppings like parsley flakes or chopped nuts over the sauced tteokkochi. The best part about homemade snacks is the freedom to customize! Enjoy your delicious, homemade Tteokkochi.
