Ingredients- 400g fresh scallions
- 100g gochugaru (Korean chili flakes)
- 50g minced garlic
- 200ml tuna extract (fish sauce alternative)
- 50ml soy sauce
- 50ml cooking wine (mirin or rice wine)
- 30ml Korean soup soy sauce (jikganjang)
- 50ml oligosaccharide (or corn syrup)
Cooking Instructions
Step 1
Wash the fresh scallions thoroughly under running water and pat them dry. Trim off any roots or wilted parts. Finely chop the scallions into approximately 0.5cm pieces. You’ll be using both the white and green parts.
Step 2
In a large bowl, combine the chopped scallions with all the seasoning ingredients: gochugaru, minced garlic, tuna extract, soy sauce, cooking wine, jikganjang, and oligosaccharide.

Using a spatula or spoon, gently mix everything together until the scallions are evenly coated with the seasoning. Continue to mix until the scallions slightly soften and the flavors meld together.

Transfer the prepared scallion seasoning paste into a clean, sterilized airtight container (glass jars work well). Seal the lid tightly and store in the refrigerator. This paste can stay fresh for at least two weeks. Always use a clean spoon when serving to maintain freshness.
