Today, I’m excited to share the ‘golden recipe’ for an all-purpose seasoning sauce featured on ‘Saengsaengjeong’ (a popular Korean show). It’s a super simple recipe that takes only about 10 minutes to make! Its sweet and savory flavor profile makes it perfect as a sauce for ‘sotteok sotteok’ (skewer of rice cakes and sausages), it can transform leftover chicken into a delightful sweet and spicy chicken, and it’s also fantastic for stir-frying anchovies or dried shrimp. Ingredients

  • 1 apple (approx. 300g, use 1.5 if small)
  • 1/2 cup water (100ml)
  • 1/2 cup oligodang (corn syrup) (100ml)
  • 3 Tbsp soy sauce (45ml)
  • 1/2 cup ketchup (100ml)
  • 3 Tbsp gochujang (Korean chili paste) (45ml)
  • 1 Tbsp fine gochugaru (Korean chili powder) (15ml)
  • 3 Tbsp minced garlic (45g)
  • 1 Tbsp cooking oil (15ml)
  • 1/2 Tbsp cornstarch (7.5g)
  • 1 Tbsp water (for cornstarch slurry)

Cooking Instructions

Step 1

First, let’s gather the key ingredients for our all-purpose seasoning sauce. The recipe calls for one large apple (around 300g). If you’re using smaller apples like I am, you’ll need about 1.5 of them. For best accuracy, using a kitchen scale is recommended.

Wash the apple thoroughly, remove the core, and chop it into pieces that are easy to blend in a mixer. You can leave the skin on to maximize the apple’s flavor and nutrients.

Place the chopped apple and 1/2 cup (100ml) of water into a blender. Blend until smooth. This recipe uses apple for natural sweetness, eliminating the need for a large amount of sugar often found in other all-purpose sauces, making it a healthier option.

Now, heat 1 Tbsp of cooking oil in a pan or pot over low heat. Add 3 Tbsp of minced garlic and sauté gently until fragrant. Be careful not to burn the garlic, as its starch content can cause it to scorch easily over high heat. Once the garlic is aromatic, add 3 Tbsp of soy sauce, 1/2 cup of oligodang, and the blended apple mixture. Increase the heat to medium-high and bring it to a boil. Cooking the apple will further enhance its natural sweetness.

Once the sauce comes to a rolling boil, reduce the heat to medium. Stir in 3 Tbsp of gochujang, 1 Tbsp of fine gochugaru, and 1/2 cup of ketchup.

Using a spatula, stir the mixture constantly for about 1-2 minutes, ensuring all ingredients are well combined and the sauce is smooth. Make sure there are no lumps.

Finally, it’s time to thicken the sauce. In a small bowl, whisk together 1/2 Tbsp of cornstarch with 1 Tbsp of water to create a smooth slurry. Gradually pour this slurry into the simmering sauce while stirring continuously until you reach your desired consistency. Turn off the heat immediately after thickening. Overcooking the cornstarch can result in a bitter taste.
