All-Purpose Seasoning Sauce

Today, we’re making a delightfully tangy and spicy seasoning sauce that will awaken your appetite. This sauce gets even more delicious the longer it rests and matures. Having this all-purpose seasoning sauce on hand will make cooking so much easier for various dishes!
Main Ingredients
- 2 cups Gochugaru (Korean chili flakes)
- 1/2 cup Vinegar (for tanginess)
- 1/2 cup Sugar (to balance sweetness)
- 1/2 cup Soy Sauce (for umami)
- 1/2 cup Maesil Extract (Korean plum syrup, for deep sweetness and aroma)
- 1/2 cup Water (to adjust consistency)
- 1 Tbsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil (for fragrance)
Cooking Instructions
Step 1
First, prepare 2 cups of finely ground Gochugaru (Korean chili flakes). Using fine flakes will give the sauce a smoother texture and vibrant color.
Step 2
Measure and prepare 1/2 cup of vinegar to provide that delightful tanginess, and 1/2 cup of sugar to add sweetness.
Step 3
Prepare 1/2 cup of soy sauce, which is key for delivering rich umami flavor.
Step 4
Measure out 1/2 cup of Maesil Extract (Korean plum syrup) for a natural, deep sweetness and aroma, and 1/2 cup of water to help achieve the desired sauce consistency.

In a clean container or bowl, add all 2 cups of the prepared Gochugaru.

Next, pour the 1/2 cup of Maesil Extract over the Gochugaru to add its deep sweetness.

Carefully add the 1/2 cup of vinegar for that refreshing tanginess.

Now, add the 1/2 cup of sugar for sweetness.

Add the 1/2 cup of soy sauce for that essential umami flavor, followed by the 1/2 cup of water. The Gochugaru will start to absorb the liquids and the sauce will thicken. Stir well to ensure all ingredients are combined without clumps.

Stir until the sugar is completely dissolved. It’s important to mix thoroughly so all the ingredients meld together harmoniously. Continue stirring until you achieve a smooth consistency with no lumps.

Prepare 1 tablespoon of toasted sesame seeds to add a nutty aroma and flavor.

Finally, add 1 tablespoon of sesame oil for a fragrant finish and stir everything together once more.

Transfer the finished seasoning sauce to an airtight container and store it in the refrigerator. This will keep it fresh for a long time.

For the best flavor, allow the sauce to mature in the refrigerator for at least 2-3 days before using. After maturing, taste and adjust the seasoning if needed by adding a little more fish sauce (like Kkanari Aekjeot) or soy sauce to suit your preference.
