When traveling abroad is difficult, I decided to recreate the memorable hotel breakfasts of the past. This dish was inspired by a recent visit to a brunch cafe, and my daughter and I felt like we were traveling abroad while we ate it. It’s so simple to make, you barely need to cook anything – just slice and arrange the ingredients for a beautiful presentation.
Brunch Ingredients- 100g Salmon or Smoked Salmon
- 5 Campari Tomatoes
- 2 Hard-boiled Eggs
- 1/2 Avocado
- 2 slices Cheese
- 2 slices Bread
- 1 Tbsp Fruit Jam
- 1 Tbsp Pistachio Spread
- 1 Tbsp Peanut Butter
- 1 Lemon Wedge
Creamy Salmon Sauce- 8g Lemon Dill Butter
- 8g Mascarpone Cheese or Cream Cheese
- 1/2 Tbsp Mayonnaise
- 1/4 Tbsp Lemon Juice

Cooking Instructions
Step 1
Campari tomatoes are a wonderful choice, falling between cherry and regular tomatoes in size. They are flavorful and convenient, offering the best of both worlds. They add a lovely freshness to the brunch.

Boil your eggs to your preferred level of doneness. For a firm yolk, boil for 11 minutes. For a soft-boiled egg with a slightly runny yolk, try 7 minutes. For a very gooey, runny yolk, 5 to 4 minutes is ideal. A 6-minute boil often results in a perfectly jammy center. Adjust the time to achieve your desired consistency.
Step 3
Toast your bread slices in a toaster until they are golden brown and wonderfully crisp. The warmth and texture of freshly toasted bread elevate the brunch experience.

Let’s prepare the salmon sauce. Combine equal parts lemon dill butter and mascarpone cheese (or cream cheese) in a small bowl. Add 1/2 tablespoon of mayonnaise and stir until smooth and creamy. Finally, stir in 1/4 tablespoon of lemon juice for a bright, zesty finish. This creates a delicious and rich sauce for your salmon.

If using fresh salmon, slice it thinly. Thinly sliced salmon melts beautifully in your mouth, offering a delicate texture.

Avocado, with its creamy and luscious texture, is a brunch essential. To ensure optimal ripeness, let it sit for 2-3 days until it turns a deep greenish-brown and the flesh is soft to the touch. Using a perfectly ripe avocado is key to achieving that delightful creamy consistency.

Spoon your choice of jams and spreads into small individual dishes, about 1 tablespoon each. We’ve prepared a rich peanut butter, a sweet peach jam, and a unique pistachio spread. Slicing cheese thinly can be a bit tricky. A helpful tip is to slightly warm the cheese, then use a vegetable peeler or a mandoline slicer to create delicate ribbons. Now, it’s time to artfully arrange all your components on the plate. Garnish the salmon with a wedge of lemon for an elegant touch.
