This flavorful fried rice is packed with walnuts, known for boosting brain power, savory anchovies, and nutrient-rich seaweed. It’s a delicious and healthy meal perfect for a quick lunch or a nutritious snack for kids.
Main Ingredients- 2 bowls cooked rice
- 40g walnuts
- 15g dried anchovies
- 15g dried seaweed
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, rehydrate the dried seaweed by soaking it in cold water for about 10 minutes until softened. Rinse it thoroughly multiple times under running water to remove any excess salt. Squeeze out the water and finely chop it into pieces about 1cm in size. This ensures even cooking and prevents clumping.
Step 2
Sift the anchovies in a sieve to remove any powder or small bones. Finely mince them into pieces similar in size to the chopped seaweed (about 1cm). If using large dried anchovies for broth, remove their heads and innards before mincing. This will add a pleasant chewy texture and rich umami.
Step 3
Heat a dry pan over medium-low heat. Add the prepared anchovies and stir constantly to prevent burning. Toast them for about 1-2 minutes until fragrant. This step helps to remove any fishy smell and enhances their nutty flavor.
Step 4
Add the roughly chopped walnuts to the pan with the anchovies. Continue to stir-fry together over medium-low heat for another 1-2 minutes. Lightly toasting the walnuts will make them even more aromatic and deliciously crunchy.
Step 5
Push the toasted anchovies and walnuts to one side of the pan. Add the finely chopped dried seaweed to the empty space. Sauté the seaweed for about 1 minute until it softens and wilts. Then, mix it well with the anchovies and walnuts. Finally, drizzle in the sesame oil and stir for another 30 seconds to release its fragrance.
Step 6
Add the 2 bowls of warm cooked rice to the pan with the sautéed seaweed, anchovies, and walnuts. Drizzle the soy sauce evenly over the rice. Gently stir and mix everything together with a spatula, ensuring the ingredients are well distributed among the rice grains. Continue to stir-fry for another 2-3 minutes until the rice is fluffy and slightly toasted. You can sprinkle some toasted sesame seeds on top for extra flavor, if desired.
