Apple Dressing That Stays Fresh
Beautiful apple dressing that stays fresh for a long time without browning
Even cut apples, which tend to turn unappetizingly brown, maintain their beautiful, soft cream color for over a week when mixed with lemon juice, sugar, and vinegar and allowed to mature. It’s best to use the ingredients in this recipe as listed, adjusting only the quantities to suit your taste. Your salads will thank you for the added brightness!
Ingredients (using Korean rice spoon measurements)- 1/2 Apple (approx. 160g)
- 1/6 Onion (approx. 20g)
- 1/2 Lemon
- 1/2 to 1 container Plain Cream Yogurt (85g size)
- 1 Tbsp Olive Oil
- 1-2 Tbsp Honey
- 1-2 Tbsp Vinegar
- 1/2 tsp Salt
- 1 tsp Sugar
Cooking Instructions
Step 1
First, peel and core half an apple. Wash the 1/6 onion thoroughly and cut it into chunks.
Step 2
Place the prepared apple and onion chunks into a blender. Add 1 tablespoon of water to help blend smoothly into a fine puree.
Step 3
Now, let’s add the key ingredient for creaminess: store-bought plain cream yogurt. Add half of the yogurt to the apple and onion mixture and blend. The remaining half will be used later to adjust the taste and consistency.

Next, squeeze the juice from half a lemon. This is crucial for preventing the apple from browning and adding a refreshing tartness. Cut the lemon in half and press firmly to extract the juice.
Step 5
Add the remaining half container of cream yogurt, the squeezed lemon juice, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1 tablespoon of honey, and 1 tablespoon of olive oil (or grapeseed oil) to the blender with the apple and onion puree. Blend everything together until well combined.
Step 6
After the initial blending, taste the dressing. It’s important to adjust the sweetness and tartness to your preference, as the natural sweetness of apples can vary. Use vinegar to add acidity, honey for sweetness, and the remaining yogurt for a smoother texture and richer flavor. I added 1 tablespoon of vinegar, 1 tablespoon of honey, and the rest of the yogurt to achieve the perfect balance.
Step 7
Admire the beautiful color of your freshly made apple dressing. It should have a lovely, soft ivory hue.
Step 8
Here’s the dressing after 4 days. As you can see, there’s absolutely no browning – it still maintains its beautiful ivory color.

This apple dressing only gets better with time. While it contains onion, it doesn’t taste overly pungent and is surprisingly enjoyed by children. Plus, with less mayonnaise and oil compared to other dressings, it’s a fantastic light option for those watching their intake.
