  • 150g Sugar
  • 3 Eggs, at room temperature
  • 220g Cake Flour
  • 2 tsp Baking Powder
  • 60g Raisins
  • 1/2 cup Apple Pulp (leftover from juicing)

First, juice 2 fresh apples to obtain clear apple juice. Don’t discard the pulp left behind; we’ll be using it in our apple pound cake today! This pulp will add wonderful moisture and a subtle apple flavor to your cake. If the pulp pieces are too large, you can chop them slightly.

Let’s prepare our ingredients! Ensure your butter is fully softened at room temperature so it’s easy to cream. Similarly, let your eggs come to room temperature to prevent the batter from curdling. Sift the cake flour and baking powder together into a bowl, sifting them 2-3 times. This aerates the flour, leading to a lighter and fluffier cake.

In a large mixing bowl, cream the softened butter using a whisk or electric mixer until it’s pale and fluffy. Gradually add the sugar in three additions, beating well after each addition until combined. Lightly beat the eggs in a separate small bowl, then add them to the butter mixture in three stages, mixing thoroughly after each addition to ensure no separation. Add the sifted cake flour, baking powder, raisins, and the prepared apple pulp to the bowl. Now, using a spatula, gently fold the ingredients together with a cutting motion, mixing just until no dry streaks of flour remain. Be careful not to overmix, as this can result in a tough cake.

Prepare your pound cake pan by lining it with parchment paper or greasing it with butter and flour. Pour the batter evenly into the prepared pan, filling it about 80% full.
