Aromatic and Savory Nasturtium Soybean Paste Stew (Naengi Doenjang Guk)
Naengi Doenjang Guk: A Mildly Seasoned Stew with the Addition of Perilla Powder
Adding perilla powder to the nasturtium enhances the stew’s savory depth, making it refreshingly light and boosting its nutritional value. This 된장국 (Doenjang Guk) is a delightful way to enjoy the spring season.
Main Ingredients- 1 handful of fresh nasturtium (thoroughly cleaned and trimmed)
- 1 Tbsp soybean paste (Doenjang, homemade or store-bought)
- 1-2 Tbsp perilla seed powder (for a nutty flavor)
- A 3cm piece of Korean radish (Mu), thinly sliced
- 1/2 block of firm tofu, cubed
- 1 piece of dried kelp (Dashima)
- A small handful of dried anchovies (for broth)
- At least 5 cups of rice water (Ssal-tteulmul)
- 1 tsp minced garlic
- 1/4 stalk of green onion, finely chopped
Cooking Instructions
Step 1
In a pot, combine the rice water, dried kelp, and dried anchovies. Bring to a boil over high heat. Once boiling, remove the kelp and anchovies to prevent the broth from becoming too strong. This forms the flavorful base for your stew.
Step 2
After removing the kelp and anchovies, add the thinly sliced Korean radish to the broth. Continue to simmer over medium heat until the radish becomes translucent and tender. This step ensures a sweet and clear broth.
Step 3
While the radish is cooking, prepare the nasturtium. After cleaning and trimming it, gently toss the nasturtium with the perilla seed powder in a bowl. This helps to meld the flavors and awaken the aromatic qualities of the nasturtium.
Step 4
Once the radish is tender and translucent, add the perilla-coated nasturtium and the cubed tofu to the pot. Let it simmer for a few more minutes until the tofu is heated through. Stir gently to avoid breaking the tofu.
Step 5
Now, dissolve the soybean paste (Doenjang) in a little bit of the hot broth before adding it to the pot. Stir well to combine. Be careful not to boil the stew vigorously after adding the doenjang, as it can diminish its rich flavor. Simmer gently.
Step 6
Finally, add the chopped green onions and minced garlic. Let it simmer for another minute to release their aromas. Taste the stew and adjust the seasoning with salt if needed. Your delicious and nourishing Naengi Doenjang Guk is ready to be enjoyed, perfect with a bowl of steamed rice!
