Rich Basil Pesto Pasta: The Scallops Are Just a Bonus!

I absolutely adore basil pesto! It’s delicious simply spread on baguette bread, but it truly shines when incorporated into pasta dishes. I ordered some basil pesto and fresh scallops. It’s a wonderful world where you can order today and have it delivered to your doorstep by early morning tomorrow… ^^

Ingredients
  • Pasta (your favorite kind, for 2 servings)
  • Fresh Scallops (about 300g, with shells)
  • Store-bought Basil Pesto (2-3 Tbsp)
  • Garlic (1 Tbsp, minced)
  • Olive Oil (3-4 Tbsp)

Cooking Instructions

Step 1

Rinse the scallops thoroughly under running water. Place them in a microwave-safe container with their shells still on. Cover with plastic wrap or a lid and microwave for 6 minutes. (Wow, such a simple method! No need for the hassle of steaming. This way is incredibly easy.)

Step 2

Carefully remove the scallop meat from the shells once they’ve cooled slightly after microwaving. We’ll add this cooked scallop meat to the pasta for extra flavor.

Step 3

Heat olive oil in a pan over medium heat. Add the minced garlic and sauté until golden brown and fragrant. Be sure to use low heat to prevent the garlic from burning.

Step 4

If you were using clams instead of scallops, you’d add them now after sautéing the garlic, along with a splash of white wine, cover, and cook until they open. (Since I’m using the pre-cooked scallops, I’ll add the pasta directly to the pan and stir-fry. Adding a splash of white wine would be delicious, but alas, we only have soju at home, no wine! Hahaha)

Step 5

Add the pasta to the pan and stir-fry for a minute. Then, add about 1/2 cup of the pasta cooking water (starchy water). This water helps the sauce emulsify and cling to the pasta beautifully.

Step 6

Now for the star of the dish: add a generous two tablespoons of basil pesto. (I’ve used about half of the pesto I had! Generous amounts make for a richer flavor. ㅠㅠ)

Step 7

Quickly toss everything together to coat the pasta evenly with the pesto. Stirring is key to ensuring every strand is coated in that vibrant green goodness.

Step 8

Finally, add the cooked scallop meat and give it a final gentle mix. Your delicious Basil Pesto Scallop Pasta is ready!

Step 9

For an extra touch, sprinkle some grated Parmesan cheese on top. Fresh basil leaves also make a lovely garnish and add a burst of freshness.
