I spotted fresh Chanamul (Korean potherb) at the market and couldn’t resist making a simple salad with it! Chanamul is rich in beta-carotene and has a unique, delightful aroma. It’s a representative alkaline food, packed with fiber, making it great for preventing constipation. Enjoy this healthy and flavorful salad that’s perfect for stimulating your appetite!

Seasoning Ingredients

  • 1.5 Tbsp Soy Sauce for Soup (Guk-ganjang)
  • 1 tsp Salt
  • 1/2 Tbsp Toasted Sesame Seeds
  • A little Sesame Oil

Cooking Instructions

Carefully wash the fresh Chanamul under running water to remove any dirt or debris. Trim off any yellowed or wilted leaves. Bring a pot of water to a boil, add a pinch of salt (about 1 Tbsp salt per liter of water), and briefly blanch the Chanamul for 30 seconds to 1 minute. Be careful not to overcook, as it can become mushy.

Immediately after blanching, rinse the Chanamul under cold or running water to quickly cool it down. This helps maintain its crisp texture and vibrant green color.

Gently squeeze out excess water from the Chanamul. Then, cut it into bite-sized pieces. Typically, cutting them into about 4-5 cm lengths makes them easy to eat. If the stems are thick, you can cut them a little smaller.

Place the prepared Chanamul in a large bowl. Add 1.5 Tbsp of soy sauce for soup, 1 tsp of salt, 1/2 Tbsp of toasted sesame seeds, and a little sesame oil. (You can add a little minced garlic if you like, but I’ve omitted it here to highlight the natural aroma of the Chanamul.) Gently toss and mix with your hands until all the ingredients are evenly coated.
