Dumpling Filling Ingredients

  • King-sized dumpling wrappers (enough for 1 batch)
  • 566g minced pork (recommend around 20% fat content)
  • 300g minced beef (optional; using only pork results in a softer texture)
  • 2 Tbsp soju
  • 1 Tbsp cooking wine (cheongju)
  • 1 handful soaked glass noodles (approx. 50g)
  • 1 tsp grapeseed oil
  • 1 Tbsp soy sauce
  • 1/2 bunch fresh chives (approx. 150g)
  • 3 white parts of green onions

Dumpling Filling Seasoning

  • 2 Tbsp oyster sauce
  • 2 Tbsp regular soy sauce (adjust to taste)
  • 1 Tbsp minced garlic
  • 3 Tbsp garlic-ginger oil (minced garlic and ginger fried in oil and cooled)
  • 3 Tbsp sesame oil
  • 2 Tbsp cooking wine (mirin or similar)
  • 1/2 tsp MSG or other umami enhancer (optional, to taste)
  • Salt (to taste)
  • Ground black pepper (to taste)

Cooking Instructions

Step 1

In a large bowl, combine the minced pork and minced beef (if using). Add 2 Tbsp soju, 1 Tbsp cooking wine, 1 Tbsp soy sauce, and 1 tsp grapeseed oil to tenderize the meat and remove any gamey odor. Mix well with your hands until the seasonings are evenly distributed.

Step 2

Soak the glass noodles in lukewarm water for about 30 minutes. Then, boil them in water for 3-4 minutes until cooked. Drain the noodles, rinse them under cold water, pat dry completely, and finely chop them into bite-sized pieces.

Step 3

Wash the fresh chives thoroughly and pat them dry. Finely chop them into small pieces, about 0.5cm in length. Finely chop the white parts of the green onions as well.

Step 4

Add the chopped green onions and chives, along with the chopped glass noodles, to the seasoned meat mixture.

Step 5

Add all the dumpling filling seasoning ingredients: 2 Tbsp oyster sauce, 2 Tbsp regular soy sauce, 1 Tbsp minced garlic, 3 Tbsp garlic-ginger oil, 3 Tbsp sesame oil, 2 Tbsp cooking wine, 1/2 tsp MSG (if using), salt, and pepper. Mix and knead the ingredients with your hands until the filling becomes sticky and well-combined. Feel free to adjust the seasonings to your preference.

Step 6

Lightly moisten the edges of the king-sized dumpling wrappers with water. Place a suitable amount of the prepared filling onto each wrapper. Fold and pleat the wrappers to create your desired dumpling shape, ensuring a secure seal to prevent the filling from escaping.

Step 7

Arrange the formed dumplings on a steamer lined with a damp cloth or parchment paper. Steam them over medium heat for about 10-12 minutes, or until the wrappers become translucent and the filling is cooked through. (Alternatively, for pan-fried dumplings, heat oil in a pan and fry until golden brown on both sides.)

Step 8

Once steamed, arrange the dumplings attractively on a serving plate. Serve hot with your favorite soy-based dipping sauce for a delicious meal!
