For my daughters who absolutely adore dumplings, whether they’re kimchi or meat-filled, I’ve made these hearty pork dumplings packed with fresh chives. You’ll find that even picky eaters who don’t usually fancy chives will love these! This recipe yields a generous batch, perfect for storing in the freezer for a quick and satisfying meal anytime.
Dumpling Filling Ingredients- 1kg Ground Pork (Choose a cut with a good balance of lean meat and fat)
- 1 bunch Fresh Chives (approx. 300g)
- 1.5 medium Onions
- 4-5 stalks of White Part of Leeks
- 2 Tbsp Minced Garlic
Dumpling Seasoning Ingredients- 1/3 cup Soy Sauce (approx. 60ml)
- 1 Tbsp Sugar
- 1/2 Tbsp Salt
- 1/2 Tbsp Black Pepper Powder
- 2-3 Tbsp Sesame Oil
- 1-2 Tbsp Toasted Sesame Seeds (adjust to taste)
- 3 Tbsp Oyster Sauce
- 2 Tbsp Cooking Sake (or Mirin)
- 1/3 cup Soy Sauce (approx. 60ml)
- 1 Tbsp Sugar
- 1/2 Tbsp Salt
- 1/2 Tbsp Black Pepper Powder
- 2-3 Tbsp Sesame Oil
- 1-2 Tbsp Toasted Sesame Seeds (adjust to taste)
- 3 Tbsp Oyster Sauce
- 2 Tbsp Cooking Sake (or Mirin)
Cooking Instructions
Step 1
First, prepare the vegetables for the dumpling filling. Wash the chives and leeks thoroughly, pat them dry, and finely chop them into pieces about 0.5cm in length. Finely dice the onions to a similar size. It’s important to chop the vegetables evenly, as large pieces can make folding the dumplings difficult.
Step 2
Season the ground pork with salt, pepper, and cooking sake (or mirin). Cooking sake helps to remove any gamey odor from the pork and adds a wonderful depth of flavor. Mix everything together with your hands until the seasoning is evenly distributed. Let it marinate for about 5 minutes.

Add the finely chopped chives, leeks, and onions to the bowl with the marinated ground pork. Next, add the soy sauce, sugar, minced garlic, sesame oil, and toasted sesame seeds. Do not add the oyster sauce just yet.
Step 4
To maximize the umami flavor of the dumpling filling, add 3 tablespoons of oyster sauce. Oyster sauce will enrich the taste of the dumplings, giving them a more profound and savory profile with a hint of Chinese flavor. Mix all the ingredients thoroughly to create the complete dumpling filling.

Now it’s time to form the dumplings! Just before placing the filling onto the dumpling wrappers, crack one egg into the filling and mix it in lightly. The egg will help make the filling more tender and ensure the wrapper and filling adhere well together.
Step 6
Place your desired amount of filling onto each dumpling wrapper and carefully fold and seal them. Bring water to a rolling boil in your steamer, then arrange the formed dumplings in a single layer, making sure they don’t touch each other. Steam over high heat for 10 to 15 minutes. The cooking time may vary slightly depending on the size of your dumplings, so check for doneness.
