  • Minced green onion 1 Tbsp
  • Minced garlic 1 Tbsp
  • Sesame oil 1 Tbsp
  • Cooking wine (like Mirin) 1 Tbsp
  • Oligodang (corn syrup) 1 Tbsp
  • Onion juice 1 Tbsp
  • Toasted sesame seeds 1 Tbsp
  • Sugar 1 Tbsp
  • Ginger powder or minced ginger 1/2 tsp
  • Black pepper to taste

First, prepare the pork by slicing it into bite-sized pieces, about 2-3cm, suitable for stir-frying. If there’s a lot of blood, gently pat it dry with paper towels to help remove any unwanted odor.

Now, let’s make the delicious seasoning sauce. In a large bowl, combine 4 Tbsp soy sauce, 1 Tbsp minced green onion, 1 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp cooking wine, 1 Tbsp oligodang, 1 Tbsp onion juice, 1 Tbsp toasted sesame seeds, 1 Tbsp sugar, 1/2 tsp ginger powder (or minced ginger), and a pinch of black pepper. Mix them well. Add the sliced pork to the sauce and gently toss to coat evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or ideally overnight. Marinating allows the flavors to penetrate the meat, making it even tastier. If you’re short on time, even 30 minutes will yield delicious results.

Wash the chives thoroughly and cut them into approximately 4-5cm lengths. For the enoki mushrooms, trim off the base and separate the strands.

Heat a dry pan over medium-high heat. Add the marinated pork to the pan and stir-fry. It’s best to start without any oil to allow the pork’s natural flavors to develop. If the pork starts to stick or seems dry, add a little cooking oil or perilla oil.

When the pork is almost cooked through, add the prepared chives and enoki mushrooms. Stir-fry quickly over high heat for just a minute or two until the chives and mushrooms are slightly wilted but still vibrant. Avoid overcooking, as they can become mushy and release excess water.
