Grandma’s Country-Style Chive Pancake with Perilla Leaves

Aromatic Chive Pancake with Abundant Perilla Leaves

I dearly miss the delicious chive pancakes my grandmother used to make with homegrown chives and perilla leaves at her countryside home. Inspired by those fond memories, I now grow perilla leaves myself each year to recreate that comforting taste. If you’ve ever tasted this, you’ll understand its captivating charm and why it lingers in your thoughts. Chives and perilla leaves are a truly perfect match, creating a harmonious blend of flavors and aromas.

Main Ingredients

  • Perilla leaves 200g
  • Chives 150g
  • Pancake mix (Buchim Garu) as needed
  • Thinly sliced onion, a small amount

Cooking Instructions

Step 1

First, prepare the perilla leaves that will add their wonderful aroma. If you’ve grown them yourself, that’s fantastic, but they are also readily available in most markets. Wash them thoroughly and pat them dry.

Step 1

Step 2

I grew these from seeds, and perilla plants grow surprisingly well, making the gardening process quite enjoyable. Using freshly grown herbs like this elevates the dish.

Step 2

Step 3

Now, it’s time to prepare the star ingredients: chives and perilla leaves. Wash the chives and cut them into lengths of about 5-7 cm. Chives and perilla are a match made in heaven; combining them doubles the flavor and fragrance.

Step 3

Step 4

Perilla leaves have a distinct, strong aroma, so you can use a bit more of them than chives. The unique scent of perilla will enhance the overall flavor of the pancake. Feel free to adjust the amount to your preference.

Step 4

Step 5

In a bowl, mix the pancake mix with water to create a batter, similar to pancake batter. Aim for a consistency that isn’t too thick, just enough for the ingredients to bind together nicely. A slightly thinner batter makes it easier to spread thinly. Adding a small amount of thinly sliced onion will also bring a pleasant sweetness and depth of flavor.

Step 5

Step 6

Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle the batter onto the hot pan and spread it out thinly. You’ll hear a satisfying ‘sizzle’ as it begins to cook.

Step 6

Step 7

Flip the pancake and cook until both sides are golden brown and crispy. Ensure the edges are nicely crisped up for the best texture. Once cooked, drain off any excess oil and serve. Your aromatic perilla leaf and chive pancake is ready to be enjoyed!
