Main Ingredients
- 2 fresh eggs
- 20g fresh chives, washed and trimmed
- 1 tsp toasted sesame seeds
Seasoning
- 2 pinches of salt
- A pinch of black pepper

Cooking Instructions
Step 1
Gently crack 2 fresh eggs into a bowl. Be careful not to break the yolks for a smoother consistency.
Step 2
Add 2 pinches of salt to enhance the flavor and a pinch of black pepper for a subtle aroma. You can adjust the seasoning to your preference.

Cut the washed chives into approximately 3-4 cm lengths. This size is easy to stir-fry and eat.

Remove the chalazae (the white stringy bits) from the eggs for a more tender texture. Whisk the eggs thoroughly with chopsticks or a whisk until well beaten.

Heat a non-stick pan over medium-low heat and add a bit of cooking oil. Pour the beaten egg mixture thinly and evenly into the pan.

As the egg begins to set, use chopsticks to quickly and lightly stir and break up the egg, similar to making scrambled eggs. Ensure it cooks evenly without large clumps.

When the egg is about 70% cooked and still slightly runny (semi-cooked), add the prepared chives. Stir-fry them together briefly. Avoid overcooking at this stage to maintain the chives’ crispness.
Step 8
Turn off the heat immediately after adding the chives. Allow the residual heat of the pan to gently cook the chives. This method preserves their fragrant aroma and crisp texture, resulting in a more delicious dish. (Overcooking will make the chives tough and diminish their flavor.)

Transfer the delicious chives and egg stir-fry to a serving plate. Sprinkle with toasted sesame seeds for a final touch of flavor and visual appeal.
