Main Ingredients

  • 1 bunch Crown Daisy (approx. 50-70g)
  • 3 Eggs
  • 2 Red Chilies

Seasoning & Other Ingredients

  • 1.5 Tbsp Cooking Oil (for stir-frying)
  • A little White part of Green Onion
  • 1 Tbsp Garlic, sliced thinly
  • 1 Tbsp Cooking Wine (Mirin)
  • 1 tsp Oyster Sauce
  • 1 tsp Salt (for eggs)
  • 1 tsp Chicken Stock (or water)
  • A pinch of Ground Black Pepper
  • A little Sesame Oil (for finishing)

Cooking Instructions

Step 1

Prepare all the vegetables. Slice the garlic thinly into slivers. Cut the green onion and red chilies in half lengthwise, then slice them diagonally. This slicing method enhances their flavor when stir-fried.

Wash the crown daisy thoroughly and pat dry. Cut it into roughly 5cm long pieces. It’s helpful to separate the stems and leaves for easier cooking. (Adding the stems first will help maintain their crisp texture.)

Crack the 3 eggs into a bowl and add 1 tsp of salt. Whisk well with chopsticks or a whisk until the yolks and whites are fully combined. Try to whisk gently to avoid creating too many bubbles.

Heat 1 Tbsp of cooking oil in a pan. Pour in the whisked egg mixture. Cook the egg in large pieces, avoiding making it too thin. Stir-fry until golden brown, then carefully break it into large chunks and set aside on a plate.

Add a little more cooking oil (about 1/2 Tbsp) to the pan. Add the sliced garlic and diagonally sliced green onions, and stir-fry over medium-low heat until fragrant. Be careful not to burn the garlic. Once the aroma is released, add the red chilies and stir-fry briefly. Then, add 1 tsp of oyster sauce and 1 Tbsp of cooking wine, and quickly mix to prevent sticking.

Now, add the stems of the crown daisy to the pan and stir-fry for about 10-20 seconds to keep them crisp. Once the stems begin to soften slightly, add the crown daisy leaves and stir gently to combine. Cook quickly over high heat, as crown daisies can become mushy if overcooked.

Return the pre-stir-fried egg chunks to the pan. Gently toss them with the crown daisy for about 10 seconds, just to combine. Be careful not to break the eggs too much.
