This is a fragrant and delicious salad made with water parsley, a seasonal vegetable, and tender dried pollack. It’s easy to make, making it a light and enjoyable option for solo diners or those on a diet. Enjoy this unique dish when your appetite is low!
Main Ingredients
- 1 handful (approx. 50g) prepared dried pollack (bugak)
- 100g fresh water parsley (minari)
Seasoning Ingredients
- 1 Tbsp soy sauce
- 0.5 Tbsp minced garlic
- 1.5 Tbsp red chili flakes (gochugaru)
- 2 Tbsp plum extract (maesilcheong)
- 1 Tbsp vinegar
- 0.5 Tbsp brown sugar
- 1 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds
- Pinch of black pepper
- 1 Tbsp soy sauce
- 0.5 Tbsp minced garlic
- 1.5 Tbsp red chili flakes (gochugaru)
- 2 Tbsp plum extract (maesilcheong)
- 1 Tbsp vinegar
- 0.5 Tbsp brown sugar
- 1 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds
- Pinch of black pepper
Cooking Instructions
Step 1
Before you begin cooking, please prepare all the necessary ingredients. Wash the water parsley thoroughly and pat it dry. Have the dried pollack ready as well.
Step 2
Cut the washed water parsley into bite-sized pieces, about 3-4 cm in length. If they are too long, it might be difficult to mix.
Step 3
Gently tear the dried pollack into manageable pieces with your hands. Briefly rinse the prepared dried pollack under cold water, then squeeze out any excess water firmly with your hands. This will make it more tender.
Step 4
Now, let’s make the delicious dressing! In a bowl, combine 1 Tbsp soy sauce, 0.5 Tbsp minced garlic, 1.5 Tbsp red chili flakes, 2 Tbsp sweet plum extract, 1 Tbsp tangy vinegar, 0.5 Tbsp brown sugar, 1 Tbsp savory sesame oil, 0.5 Tbsp toasted sesame seeds, and a pinch of black pepper. Stir well until the sugar is completely dissolved. Your flavorful salad dressing is now ready.
Step 5
In a large bowl, add the dried pollack with the water squeezed out. Add about 2/3 of the prepared dressing. Gently mix with your hands, massaging the ingredients together so the dried pollack is evenly coated with the seasoning. Be careful not to mix too vigorously, as this can make the dried pollack mushy.
Step 6
Place the prepared water parsley on top of the seasoned dried pollack. Drizzle the remaining 1/3 of the dressing over the water parsley. To maintain the crisp texture of the water parsley, avoid overmixing.
Step 7
