Main Ingredients

  • 300g pre-blanched Korean gondre
  • 300g short-grain rice (approx. 1.5 cups)
  • 300g water (approx. 1.5 cups)

Gondre Seasoning

  • 2 Tbsp soy sauce for soup (guk-ganjang)
  • 2 Tbsp sesame oil

Mixing Sauce

  • 1 Tbsp chopped scallions
  • 1/2 Tbsp minced garlic
  • 4 Tbsp regular soy sauce (jin-ganjang)
  • 1 Tbsp soy sauce for soup (guk-ganjang)
  • 2 Tbsp cooking wine (mirin)
  • 1/3 Tbsp sugar
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare 300g (approx. 1.5 cups) of rice. Rinse it clean 2-3 times. Drain the rinsed rice in a sieve and let it soak for 30 minutes. This will make the rice grains chewier and more delicious.

Rinse the pre-blanched gondre thoroughly 2-3 times to remove any impurities. Squeeze out excess water firmly with your hands. Then, cut it into bite-sized pieces, about 5 sections, for easier eating, especially for children. Cutting it too long might make it difficult to eat with the rice.

To the squeezed gondre, add 2 Tbsp of soy sauce for soup and 2 Tbsp of sesame oil. Gently mix them together with your hands to season the gondre. This enhances the gondre’s flavor and boosts the taste of the rice.

Let’s make the delicious mixing sauce for the gondre pot rice. In a bowl, combine 1 Tbsp of chopped scallions, 1/2 Tbsp of minced garlic, 4 Tbsp of regular soy sauce, 1 Tbsp of soy sauce for soup, 2 Tbsp of cooking wine, 1/3 Tbsp of sugar, 1 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds. Mix everything well. You can add a pinch of chili powder for a bit of heat if you like.

Now, let’s prepare to cook the rice in the pot. Spread the rice, soaked for 30 minutes, evenly at the bottom of the pot. Pour 300g (approx. 1.5 cups) of water over the rice. Then, arrange the seasoned gondre on top of the rice and water.

Place the pot over high heat (gang-bul) and bring the water to a boil. Once the water starts boiling, gently stir the rice and gondre with a spatula to prevent the rice from sticking to the bottom. It’s important to mix the rice and gondre evenly.

After stirring the rice a couple of times, immediately cover the pot with a lid and reduce the heat to the lowest setting (yak-bul). Let the rice cook for about 15 minutes until the water is mostly absorbed. Be mindful of the heat to ensure the water doesn’t completely dry out. We recommend using a timer for precise pot rice cooking time.

After cooking on low heat for 15 minutes, turn off the heat completely and let the rice steam for another 5 minutes with the lid on. This steaming process allows the rice to become moist inside and for the gondre’s aroma to deeply infuse, resulting in a more flavorful gondre pot rice.
