Cooking Instructions
Step 1
It’s crucial to soak the dried gondre namul thoroughly before cooking. Soak it for at least 6 hours, or ideally for half a day. Soaking it the night before will make it convenient to cook the next day.
Step 2
After soaking, place the gondre namul in a pot, add water, and boil for 40 to 50 minutes. The boiling time may vary slightly depending on the dryness and type of gondre namul, so boil until it becomes tender. It’s well-cooked when a chopstick can be easily inserted.
Step 3
Rinse the boiled gondre namul under cold running water several times to remove any bitterness or impurities. Squeeze out the water completely with your hands, then cut the gondre namul into bite-sized pieces (about 2-3 cm in length). Cutting them into shorter lengths will make them easier to mix with the rice.
Step 4
Place the cut gondre namul in a bowl and gently mix it with 1 tablespoon of perilla oil. Marinating it this way will allow the fragrant flavor of the gondre to deeply infuse into the rice. Place the rice, which has been pre-soaked for about 30 minutes, into your rice cooker or pot. Then, gently lay the seasoned gondre namul on top. A 1:1 ratio of rice to water is recommended, as the moisture from the gondre namul will ensure the rice cooks up moist without becoming mushy.
Step 5
Now, let’s make the delicious seasoning sauce. In a bowl, combine 6 tablespoons of soy sauce, 2 tablespoons of fine red pepper flakes, 1 teaspoon of minced garlic, 2 tablespoons of chopped scallions, 1 tablespoon of chopped onion, 1 teaspoon of oligodang, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds. Mix everything well. You can adjust the amount of soy sauce or oligodang to your preference.
Step 6
It’s time to cook the flavorful gondre namul rice! While adding thinly sliced shiitake mushrooms or shredded radish along with the gondre namul makes the rice exceptionally tasty, today we’ve opted to use only the namul to highlight its natural flavor. Once the rice is cooked, gently mix the gondre namul and rice with a spatula. Serve this delicious gondre namul rice warm and enjoy your meal!
