Main Ingredients

  • 1 bunch Minari (Water Parsley), about 100g

Seasoning Ingredients

  • 1/2 Tbsp Doenjang (Korean fermented soybean paste)
  • 1 Tbsp Maesilcheong (Plum Extract)
  • Generous amount of toasted sesame seeds (sesame salt)
  • 1/2 Tbsp minced garlic

Cooking Instructions

Step 1

Prepare one bunch of fresh minari by washing it thoroughly. Place the minari in a large bowl and add 2 tablespoons of vinegar. Let it soak for about 5 minutes to loosen any dirt or impurities. Afterwards, rinse it under running water 2-3 times until completely clean, then drain well. This step ensures the minari is free from any soil or grit.

Step 1

Step 2

Bring a pot of water to a rolling boil. Once the water is boiling vigorously, carefully add the prepared minari and blanch it for a very short time – just 30 seconds. Blanching minari briefly helps maintain its crisp texture and preserves its nutrients.

Step 2

Step 3

Immediately after blanching, transfer the minari to a bowl of cold water to stop the cooking process and preserve its vibrant green color. Once cooled, gently squeeze out excess water with your hands. Cut the minari into bite-sized pieces, about 7cm (approximately 3 inches) in length.

Step 3

Step 4

In a mixing bowl, combine the drained and cut minari, 1/2 tablespoon of doenjang, 1/2 tablespoon of minced garlic, 1 tablespoon of maesilcheong, and a generous amount of toasted sesame seeds. Gently toss and mix everything together with your hands, ensuring the seasoning coats the minari evenly. Be careful not to overmix, which can make the minari mushy.

Step 4

Step 5

Transfer the seasoned minari salad to a serving plate. Your delicious Minari Doenjang Muchim is now ready to be enjoyed! Best served fresh, the combination of the fragrant minari, savory doenjang, and subtly sweet maesilcheong creates a truly delightful flavor experience. It’s a fantastic side dish that pairs perfectly with rice!
