Ingredients

  • Mushroom noodles, 4 servings (fresh or dried)
  • 1/4 Korean zucchini (Aehobak)
  • A small amount of carrot (approx. 1/4 medium carrot)
  • 1/2 handful of dried anchovies (for broth, about 10-15 fish)
  • 1 piece of dried kelp (Kombu, approx. 5x5cm)
  • Seasoned soy sauce (to taste)

Cooking Instructions

First, let’s prepare the delicious broth for our noodles. In a pot, add plenty of water, then add the dried anchovies and kelp. For the toppings, thinly julienne the zucchini and carrots. These will be added to the broth while it simmers. Briefly toast the anchovies in a microwave to reduce any fishy smell, then add them to the boiling water along with the kelp. Once the water boils, remove the kelp. Reduce the heat to medium-low and let it simmer gently for about 10 minutes to extract a deep, rich broth flavor. (Tip: If you have any fish cakes lying around, julienne them and add them while the broth is simmering; it will make the broth even richer!)

Now it’s time to cook the noodles. Fill a large pot with plenty of water and bring it to a rolling boil. Once the water is boiling, add the mushroom noodles. Stir occasionally to prevent them from sticking and cook for about 4-5 minutes. (Tip: Cooking times can vary depending on the type of noodle, so refer to the package instructions for the most accurate cooking time.)
