Main Ingredients- 1 handful scallions (finely chopped)
- 1 handful ham (diced)
- 1 large egg
- 1 bowl of cold cooked rice
- Small amount of mushrooms (your favorite kind, finely chopped)
- Small amount of bell pepper (for color and texture, finely chopped)
Seasoning- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare your vegetables and ham. Finely chop the scallions, and dice the ham, mushrooms, and bell pepper into bite-sized pieces. Chopping them small ensures they integrate well with the rice.
Step 2
Now, let’s cook the egg. Heat a lightly oiled frying pan over medium-high heat. Crack the egg into the pan.
Step 3
To create fluffy scrambled egg pieces rather than a solid omelet, quickly stir the egg with chopsticks as it cooks. Once cooked, remove the scrambled egg to a separate plate. It doesn’t need to be fully cooked through.
Step 4
Add a little more oil to the same frying pan if needed. Add the chopped scallions and stir-fry until they become fragrant and slightly softened, about 1-2 minutes. This step releases the sweetness and aroma of the scallions.
Step 5
Add the diced ham to the pan and stir-fry with the scallions until the ham is lightly browned and has rendered some of its fat.
Step 6
Now, add the chopped mushrooms and bell peppers. Stir-fry everything together until the vegetables are tender-crisp, about 2-3 minutes. This adds color and a pleasant crunch.
Step 7
Time to add the flavor boosters! Pour in the oyster sauce and soy sauce. Stir-fry quickly, letting the sauces coat the ingredients and caramelize slightly. Be careful not to burn them.
Step 8
Add the cold cooked rice to the pan. Use your spatula to break up any clumps of rice and stir-fry vigorously, mixing it thoroughly with the vegetables and sauces. Ensure every grain is coated.
Step 9
Taste the fried rice and season with a pinch of salt and black pepper as needed. The soy sauce and oyster sauce provide a good amount of saltiness, so adjust carefully.
Step 10
Finally, add the cooked scrambled egg back into the pan. Gently toss everything together to combine without breaking the egg pieces too much. Your delicious scallion and egg fried rice is ready to serve!
