Gently rinse the fresh chives under running cold water to remove any debris. Pat them dry thoroughly, then cut them into bite-sized pieces, about 4-5 cm long. Cutting them too long can make them difficult to stir-fry.

Crack 4 fresh eggs into a bowl. Prepare to gently whisk them.

Carefully pour 1/3 cup (approx. 60ml) of clean water into the cracked eggs. Adding water will make the eggs fluffier and more tender when cooked. Stir gently to avoid creating too much foam.

In a separate bowl, place the prepared chives and add 1/2 Tbsp (approx. 5g) of fine salt. The salt will help draw out some moisture from the chives, making them taste even better when stir-fried.
