This recipe introduces how to make a refreshing Chaminari salad in just 5 minutes, capturing the fresh essence of spring greens. Ingredients (Serves 3-4)
- Chaminari (Korean Parsley) 290g (after trimming)
- 1/3 Tbsp minced garlic
- 1 Tbsp sesame oil (or perilla oil)
- 1 Tbsp crushed sesame seeds
- 1 Tbsp soy sauce for soup (Guk-ganjang)
- A pinch of fine salt (adjust to taste)
Cooking Instructions
Step 1
First, let’s prepare the Chaminari. A bunch usually weighs about 300g before trimming; trim off the dirty parts at the base with a knife to get about 290g. Cut the cleaned Chaminari into approximately 5cm lengths. It’s best to separate the stems and leaves when washing, and then drain them thoroughly in a sieve.
Step 2
Now, it’s time to blanch the Chaminari. Bring a pot of water to a boil with a pinch of salt. Add the stems and stir gently for a moment, then immediately turn off the heat. Add the leaves and quickly stir once more, then immediately rinse under cold water. Do not overcook it! Blanching for too long will make the Chaminari tough. Rinse in cold water and drain well in a sieve. ***Over-blanching Chaminari makes it tough. Since Chaminari can be eaten raw, blanch it only for a very brief moment, as if you’re just dipping it in and taking it out.***
Step 3
Transfer the blanched Chaminari to a mixing bowl, squeezing out as much water as possible with your hands. Gently separate the strands to ensure the seasoning is evenly distributed for maximum flavor.
Step 4
Now, let’s add the delicious seasonings. Combine 1/3 Tbsp minced garlic, 1 Tbsp sesame oil (or perilla oil), 1 Tbsp crushed sesame seeds, 1 Tbsp soy sauce for soup, and a pinch of fine salt (about the size of a pea). Gently toss everything together with your hands until well combined. This creates a flavorful Chaminari salad!
