I recently visited E-mart and discovered a fantastic sale on various types of seaweed! I adore seaweed, and after contemplating just buying kelp, I decided to go for a mixed seaweed pack, bringing all the ocean’s goodness home. Since the seaweed is preserved in salt, it’s crucial to rinse it thoroughly multiple times in cold water to remove excess salt, as it can spoil quickly otherwise. Seaweed and kelp are typically blanched in boiling water before being added to rice and cooked. This recipe uses an electric pressure cooker to create this delightful seaweed rice. It’s packed with nutrients and tastes wonderful!
Main Ingredients- 100g mixed seaweed
- 6 bowls of cooked rice (equivalent to cooked rice portion)
- Water (for cooking rice)
Cooking Instructions
Step 1
Begin by thoroughly washing the rice you’ll be using to cook. After washing, drain the rice in a sieve to remove excess water. This step is essential for achieving fluffy, individual grains of rice.
Step 2
The mixed seaweed is preserved in salt, so it’s vital to remove the excess salt. Rinse the seaweed under cold running water at least 3-4 times, or until it’s completely clean. Rub gently as you rinse to ensure all the saltiness is removed, which helps eliminate any bitterness. Once clean, drain the seaweed in a sieve. Then, bring a pot of water to a boil and briefly blanch the seaweed. Be careful not to overcook it, as it can become mushy.
Step 3
Place the washed rice into your electric pressure cooker. Arrange the blanched seaweed evenly on top of the rice. When adding the water for cooking the rice, use about 2/3 of the usual amount. The natural saltiness and flavor of the seaweed will season the rice, so you likely won’t need to add any extra salt. Select the ‘nutritious rice’ or equivalent setting and start the cooking process to make your delicious seaweed rice.
Step 4
Once the rice is cooked, open the lid. Using a rice paddle, gently fluff and mix the rice with the seaweed. Stirring evenly ensures that the seaweed is distributed throughout the rice for a consistent flavor and texture in every bite.
Step 5
Serve your aromatic seaweed rice in a bowl. This rice is incredibly flavorful on its own, boasting the fresh taste of the sea and a delightful savory quality, almost as if it were seasoned. It’s so satisfying that it can easily be enjoyed as a complete meal without needing many side dishes!
