Main Ingredients- 8 shiitake mushrooms
- 300g ham
- 1/2 green onion
- 1/2 onion
- 1/3 carrot
Seasoning- 3 Tbsp cooking oil
- 1 Tbsp minced garlic
- 1 Tbsp oyster sauce
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 3 Tbsp cooking oil
- 1 Tbsp minced garlic
- 1 Tbsp oyster sauce
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the vegetables. Cut the green onion in half lengthwise, then slice it thinly about 0.3cm thick. Slicing them this way helps retain a good texture and enhances the aroma when stir-fried.
Step 2
Slice the onion into strips about 0.3cm thick, similar to the green onion. Onions become sweeter when stir-fried, adding depth to the dish’s flavor.
Step 3
Slice the carrot thinly, about 0.3cm thick. Carrots add a beautiful color and a pleasant crunch, enhancing the overall presentation and texture of the dish.
Step 4
Trim the stems from the fresh shiitake mushrooms and slice the caps about 0.5cm thick. The unique, deep flavor and chewy texture of shiitake mushrooms pair wonderfully with ham.
Step 5
Slice the ham about 0.5cm thick, similar to the shiitake mushrooms. You can cut the ham into cubes or strips, according to your preference. It tastes even better when it’s slightly browned during stir-frying.
Step 6
Now, let’s start stir-frying! Heat a pan over medium-low heat, add 3 Tbsp of cooking oil, and sauté the sliced green onion and 1 Tbsp of minced garlic until fragrant. Be careful not to burn the garlic; infusing the oil with a gentle aroma from the green onion and garlic is key.
Step 7
Once you can smell the delicious aroma from the green onion and garlic, add the sliced ham and stir-fry it together. The fat from the ham will render, blending with the aromatics to create a richer flavor.
Step 8
When the ham is adequately cooked and starting to brown slightly, add the prepared onion, carrot, and shiitake mushrooms to the pan. Stir-fry them together. It’s best to stir-fry over medium-high heat to keep the vegetables crisp.
Step 9
Once the vegetables have softened slightly and the shiitake mushrooms are tender, add 1 Tbsp of oyster sauce and stir-fry to combine all ingredients evenly. Oyster sauce adds umami, elevating the dish’s taste.
Step 10
Finally, just before turning off the heat, drizzle in 1 Tbsp of sesame oil. Adding sesame oil at the end helps preserve its fragrant, nutty flavor.
Step 11
When the nutty aroma of sesame oil fills the air, sprinkle 1 Tbsp of toasted sesame seeds to finish. Your delicious Shiitake Mushroom and Ham Stir-fry is now complete! It’s absolutely delightful served over a warm bowl of rice.
