  • A small amount of green onion

  • 2 tablespoons water
  • Red pepper flakes (gochugaru)
  • Minced garlic
  • Minced green onion
  • Sesame seeds
  • A small amount of Korean wild chives (dal-rae) (optional)
  • Minced onion

Cooking Instructions

Step 1

First, remove the tough stems from the shiitake mushrooms and rinse them. Briefly blanch the mushrooms in boiling water for about 30 seconds to 1 minute, then rinse under cold water and squeeze out excess moisture. Blanch the perilla leaves similarly in boiling water with a pinch of salt, squeeze out the water, and chop them into bite-sized pieces.

In a bowl, combine the prepared shiitake mushrooms, chopped perilla leaves, and minced green onion. Add a pinch of salt and 1 teaspoon of sesame oil. Gently mix everything together until well combined, allowing the flavors of the mushrooms and perilla leaves to meld.

Wash your rice as you normally would. Use slightly less water than usual for the rice cooker. Spread the seasoned mushroom and perilla leaf mixture evenly over the washed rice in the rice cooker. Now, you’re ready to cook the rice, preferably using a pressure cooker for the best texture.

While the rice is cooking, prepare the flavorful dipping sauce. In a small bowl, combine 1/3 cup of soy sauce and 2 tablespoons of water. Add red pepper flakes, minced garlic, minced green onion, sesame seeds, and the optional minced Korean wild chives and minced onion. Stir everything together well. You can adjust the amount of red pepper flakes to make it spicier, according to your preference.

If using a pressure cooker, the rice usually finishes cooking in about 10 minutes. Serve the freshly cooked Shiitake Mushroom Rice in a bowl and drizzle generously with the prepared sauce.
