How to Easily Make Aromatic Shiitake Mushroom Rice Using an Electric Rice Cooker
This recipe offers a delicious shiitake mushroom rice dish where you can easily enjoy the deep flavor of fresh shiitake mushrooms using an electric rice cooker. You can make a wonderful meal simply with just a rice cooker, perfect for busy days.

Step 1
This recipe’s highlight is using fresh shiitake mushrooms to maximize their natural aroma and texture. You’ll experience a different charm compared to dried shiitake mushrooms.
Step 2
Instead of washing the fresh shiitake mushrooms, gently wipe off any dirt or dust with a damp kitchen towel or cloth. Washing can cause the mushrooms’ aroma to diminish. Separate the caps from the stems. You can finely mince the stems to add to the rice or save them for making broth later. Slice the mushroom caps into about 0.5cm thick pieces. We will be using a total of 10 shiitake mushrooms.
Step 3
Rinse the rice thoroughly until the water runs clear. Place the rinsed rice in the inner pot of your rice cooker. Soaking the rice for about 10 minutes beforehand will result in fluffier and softer grains. (If you’re short on time, you can skip this step.)
Step 4
Generously spread the sliced shiitake mushrooms over the soaked rice in the pot. Adding plenty of mushrooms is key to infusing the rice with their rich flavor. Adjust the water level to be about 10% less than you normally would for cooking rice. Since the mushrooms release moisture, reducing the water prevents the rice from becoming too mushy and ensures a delicious outcome.
Step 5
Select the ‘White Rice’ or ‘Mixed Grain’ function on your electric pressure cooker, or use the ‘Vegetable Rice’ setting to cook the rice. Once cooked, gently fluff the rice with a spatula, being careful not to mash the grains. Serve it warm immediately. The fragrant shiitake mushroom aroma will permeate every grain, making it incredibly delicious. You can enjoy an even more satisfying meal by serving it with a dipping sauce or soy sauce seasoning.
