I made this for my sibling who wanted to try it! It’s a wonderful dish perfect for gatherings or as a delightful meal.
Main Ingredients
- 10 cloves garlic
- 18 medium-sized fresh shrimp
- 200ml extra virgin olive oil
- 1 Cheongyang chili pepper (optional, for spice)

Cooking Instructions
Step 1
First, peel the 10 cloves of garlic and slice them thinly. Wash the shrimp, pat them dry, and trim the tails if desired. Finely chop the Cheongyang chili pepper.
Step 2
In a thick-bottomed pan or small pot, pour in a generous 200ml of extra virgin olive oil. Add all the sliced garlic. Set the heat to high initially to warm the oil.
Step 3
While the garlic is infusing, sprinkle a little salt and pepper over the prepared shrimp for seasoning. This step is crucial for bringing out the shrimp’s flavor.
Step 4
Once the olive oil is warm and the garlic begins to gently sizzle, add the chopped Cheongyang chili pepper to infuse a spicy aroma. You can omit this or adjust the amount if you prefer less heat.
Step 5
Reduce the heat to medium-low to prevent the garlic from burning. Cook the garlic until it turns golden brown and becomes slightly crispy, almost like it’s being fried. Be careful, as burnt garlic can turn bitter. The golden garlic adds a wonderful depth of flavor to the gambas.
Step 6
When the garlic is almost fully cooked and golden, carefully arrange the seasoned shrimp in the pan. Spreading them out slightly will help them cook evenly.
Step 7
Cook the shrimp until they turn pink and plump, then turn off the heat. Be careful not to overcook the shrimp, as they can become tough. Finally, adjust the seasoning with a pinch of salt and pepper to your liking. Serve hot with warm baguette slices for dipping into the flavorful oil – it’s truly delicious!
