Hearty Korean Soybean Paste Stew Brimming with Wild Chives
As spring approaches, it’s time to savor the vibrant flavors of the season! This recipe features a generous amount of wild chives (dallae) simmered in a rich, homemade soybean paste (doenjang) stew. It’s a comforting and delicious way to enjoy the freshness of spring.
Ingredients- 1 bunch fresh Korean wild chives (dallae), about 100g
- 1 concentrated broth cube (or 500ml anchovy-kelp broth)
- 3 Tbsp Korean soybean paste (doenjang)
- 1/2 block firm tofu (about 150g)
- 1/4 large green onion (scallion)
- 2-3 dried shiitake mushrooms, rehydrated
- 1/4 medium onion

Gently rinse the wild chives under cool running water, paying attention to the roots to remove any dirt or debris. Be delicate with the tender leaves.

Pat the rinsed wild chives dry and cut them into bite-sized pieces, about 1.5 to 2 inches long. Aim for a rustic, natural cut rather than finely chopped.

In a pot, dissolve 1 broth cube in 500ml of water and bring to a boil. Once boiling, add 3 tablespoons of soybean paste and stir until fully dissolved. Simmer over medium heat for about 5 minutes to allow the paste’s savory flavor to develop.
