Cooking Instructions
Step 1
Prepare all the ingredients for your delicious Nasturtium and Soybean Powder Soy Paste Soup. Having your clean nasturtium, soybean paste, soybean powder, and broth ingredients ready will make the cooking process much smoother.
Step 2
To create a deep and refreshing broth base, place the dashi pack and one slice of radish in a pot. Simmer for about 15 minutes. This infused broth will add depth and richness to your soy paste soup.
Step 3
It’s crucial to thoroughly clean the fragrant nasturtium. First, remove any yellowed or wilted leaves. Then, carefully brush off or scrape away the soil from the roots, paying attention to any small root hairs. Finally, rinse the nasturtium multiple times under running water, ensuring no dirt remains.
Step 4
Place the cleaned nasturtium in a bowl. Add the raw soybean powder. The soybean powder will coat the nasturtium, adding a savory depth to the soup.
Step 5
Gently mix the nasturtium and soybean powder with your hands, like tossing a salad. Ensure the soybean powder evenly coats the nasturtium. This light coating prevents the powder from clumping when cooked and helps it dissolve smoothly into the broth, creating a rich flavor.
Step 6
Once the base broth is ready, strain the soybean paste through a sieve into the pot. Straining ensures a smooth consistency in the soup. Add the 2 tablespoons of soup soy sauce as well.
Step 7
Now, carefully add the soybean powder-coated nasturtium to the pot. Gently place them into the broth to allow them to meld well with the dissolved soybean powder.
Step 8
After adding the nasturtium, do not stir for the first 1-2 minutes. Let it simmer gently. This prevents the soybean powder from clumping or sticking to the bottom of the pot and allows the fresh aroma of the nasturtium to infuse subtly into the soup.
Step 9
Taste the soup and adjust the seasoning with salt if needed. The saltiness can vary depending on the soybean paste you use, so tasting and adjusting is key.
Step 10
Simmer for about 3 more minutes after adding the nasturtium, and your savory and aromatic Nasturtium and Soybean Powder Soy Paste Soup will be complete. Be careful not to overcook, as it can diminish the fresh fragrance of the nasturtium.
