Aromatic Stir-Fried Shiitake Mushrooms Recipe
Easy Shiitake Mushroom Stir-Fry Recipe Using Fresh Shiitake Mushrooms (Perfect for Side Dishes)
Create a delightful oyster sauce shiitake mushroom stir-fry, an ideal banchan (side dish), using fresh shiitake mushrooms gifted by a friend! Enjoy the chewy texture and deep flavor in this simple recipe that anyone can master. (Measurements are based on a standard tablespoon.)
Main Ingredients
- 6 fresh shiitake mushrooms (approx. 135g)
- 38g onion (about 1/4 medium)
- 36g carrot (about 1/5 medium)
- 0.7 Tbsp minced garlic
- 4 Tbsp grapeseed oil
- 0.5 Tbsp sesame oil
- 1-2 Tbsp water
- Pinch of black pepper
- Pinch of sesame seeds
Seasoning
- 0.5 Tbsp oyster sauce
- 0.5 Tbsp soy sauce
- 0.3 Tbsp oligosaccharide
- 0.5 Tbsp oyster sauce
- 0.5 Tbsp soy sauce
- 0.3 Tbsp oligosaccharide
Cooking Instructions
Step 1
Prepare 6 fresh shiitake mushrooms. Instead of rinsing them under running water, gently wipe off any dirt or dust from the surface using a damp kitchen towel. (Washing shiitake mushrooms with water can diminish their natural flavor and nutrients.)
Step 2
Separate the caps from the stems of the shiitake mushrooms. Slice the caps into approximately 2-3mm thick pieces. For the stems, trim off any dirty or rough bottom parts, then tear them lengthwise into bite-sized pieces for better texture. (If the stems are particularly dirty, you can choose to omit them and use only the caps.)
Step 3
Julienne the carrot and onion into approximately 3mm thick strips. Measure out 0.7 Tbsp of minced garlic.
Step 4
Heat a stir-fry pan over medium heat. Add the minced garlic, sliced onion, and 4 Tbsp of grapeseed oil. Stir gently with a spatula until the garlic is fragrant and the onions become slightly translucent.
Step 5
Once the garlic starts to turn golden, add the prepared fresh shiitake mushrooms and julienned carrots to the pan. Adjust the heat to medium or medium-low, stirring occasionally to prevent the ingredients from burning.
Step 6
If the pan seems too dry while stir-frying the mushrooms, add 1-2 Tbsp of water. This step helps the shiitake mushrooms absorb moisture, making them more tender and allowing the seasonings to distribute evenly. Continue stir-frying until the mushrooms soften.
Step 7
When the shiitake mushrooms are tender, pour 0.5 Tbsp of soy sauce around the edges of the pan.
Step 8
Next, add 0.5 Tbsp of oyster sauce for added umami.
Step 9
Finally, add 0.3 Tbsp of oligosaccharide for a subtle sweetness, completing the seasoning mixture.
Step 10
Gently stir-fry for another 1-2 minutes, ensuring the shiitake mushrooms and all the seasonings are evenly coated. (Taste the dish during this step. If it’s not salty enough, add a tiny pinch of salt. If you prefer more sweetness, add a bit more oligosaccharide to adjust to your preference.)
Step 11
For the finishing touch, drizzle 0.5 Tbsp of sesame oil into the pan to add a nutty aroma.
Step 12
Sprinkle a pinch of black pepper to enhance the fragrance and gently stir once more to combine everything.
