- Soup Soy Sauce (Jipganjang) 1/2 Tbsp
- Anchovy Fish Sauce (Eojangjang) 1/2 Tbsp
- Minced Garlic 1/2 Tbsp
- Chopped Green Onion 2 Tbsp
- Broth (Dashima and Anchovy Broth) 5 Tbsp
- Perilla Oil (Deulgireum) 1-2 Tbsp
- Toasted Sesame Seeds, a pinch
Cooking Instructions
Step 1
After boiling and draining the Bujigae, cut it into manageable pieces, about 2-3 cm long, twice. Cutting them prevents them from being too long and awkward to stir-fry or eat.
Step 2
In a bowl, combine the prepared Bujigae with minced garlic, soup soy sauce, and anchovy fish sauce. Gently mix and marinate for about 10 minutes to allow the flavors to meld into the chives.
Step 3
Heat a pan with 1 Tbsp of perilla oil over medium heat. Add the chopped green onion and the marinated Bujigae. Stir-fry until the green onions become fragrant and slightly softened.
Step 4
Pour in the 5 Tbsp of broth into the pan. Cover with a lid and reduce the heat to low. Let it simmer gently for about 5-7 minutes, allowing the chives to become tender and absorb the seasoning.
Step 5
Once the liquid has reduced to a light simmer, remove the lid and turn the heat up to high. Quickly stir-fry the chives to maintain a moist texture. Drizzle with the remaining 1 Tbsp of perilla oil and sprinkle with toasted sesame seeds for a final touch of nutty aroma.
Step 6
Your delicious stir-fried Bujigae from Ulleungdo Island is now ready! Enjoy this flavorful side dish with a warm bowl of rice.
