- Wild chives ½ bunch
- Perilla leaves 10 sheets
Seasoning- Vinegar 2 Tbsp
- Gochugaru (Korean chili powder) 1 Tbsp
- Oligosaccharide 1 Tbsp
- Sugar 1 Tbsp
- Sesame oil 1 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Soy sauce 1 Tbsp
- Sesame seeds a pinch
- Vinegar 2 Tbsp
- Gochugaru (Korean chili powder) 1 Tbsp
- Oligosaccharide 1 Tbsp
- Sugar 1 Tbsp
- Sesame oil 1 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Soy sauce 1 Tbsp
- Sesame seeds a pinch
Cooking Instructions
Step 1
Prepare the water dropwort by washing it thoroughly and then cutting it into approximately 6cm lengths. Ensure it’s clean and trimmed of any wilted parts.
Step 2
Halve the cucumber lengthwise and then slice it diagonally into bite-sized pieces, about 0.5cm thick. This will add a refreshing crunch.
Step 3
Clean the wild chives and cut them into about 6cm lengths. Gently crush the white bulbous ends with the back of your knife; this will help them absorb the dressing and release their flavor.
Step 4
Cut the perilla leaves into bite-sized pieces (about 3-4 sections each). Drain the canned whelks, reserving the liquid, and cut the whelks into manageable pieces (about 2-3cm). Trim off any tough ends from the whelks for a tender bite.
Step 5
In a bowl, combine the soy sauce (1 Tbsp), gochujang (1 Tbsp), gochugaru (1 Tbsp), sugar (1 Tbsp), oligosaccharide (1 Tbsp), vinegar (2 Tbsp), and sesame oil (1 Tbsp). Mix well to create the dressing. Gently add the prepared water dropwort, cucumber, wild chives, perilla leaves, and whelks to the dressing. Carefully toss everything together by hand to coat evenly, being careful not to mash the ingredients.
Step 6
Once everything is well-mixed and coated, sprinkle with sesame seeds for a nutty aroma and visual appeal. Transfer to a serving dish and enjoy this fresh and flavorful salad. It’s a fantastic side dish or an excellent accompaniment to alcoholic beverages like makgeolli or soju!
