This Water Dropwort Pancake (Minari Jeon) brings back memories of a hidden gem restaurant near Ungilsan Station, popular among cycling enthusiasts. Though the restaurant is no longer there, I wanted to recreate that taste from my memories. Let’s try making it together and relive those cherished moments with this flavorful pancake!
Main Ingredients- 1/2 bunch fresh Water Dropwort (Minari)
- 1 Cheongyang chili pepper (for a hint of spice)
- 1/2 cup all-purpose flour
- 1 cup pancake mix (buchim garu)
Batter and Seasoning- 1/2 Tbsp salt
- Vegetable oil, for frying
- 450ml cold water
- 1/2 Tbsp salt
- Vegetable oil, for frying
- 450ml cold water
Cooking Instructions
Step 1
Begin by preparing the water dropwort. Trim any tough stems or wilted leaves, and wash it thoroughly under cold running water to remove any dirt. Shake off excess water. Cut the cleaned water dropwort into bite-sized pieces, about 3-4 cm long. Finely chop the Cheongyang chili pepper after removing the seeds.
Step 2
In a mixing bowl, combine the all-purpose flour, pancake mix, and salt. Gradually add the cold water while whisking continuously until you achieve a smooth, lump-free batter. The batter should be relatively thin; this helps the water dropwort cook evenly and become crispy.
Step 3
It’s important that the batter isn’t too thick! For the best flavor and texture, a generous amount of water dropwort is key. A thinner batter allows the ingredients to meld beautifully, creating a more vibrant and delicious pancake.
Step 4
Now, let’s cook! Heat a frying pan over medium-low heat and add a moderate amount of vegetable oil. Add the prepared water dropwort and chopped chili pepper to the batter and mix well. Once the pan is hot, ladle portions of the batter onto the pan, spreading them into round shapes. Cook for a few minutes until the underside is golden brown and crispy, then flip and cook the other side.
Step 5
Your aromatic and delicious Water Dropwort Pancake is ready! This recipe makes about three pancakes when using a small pan (around 20 cm in diameter). Serve hot with a side of soy-based dipping sauce for an extra burst of flavor. Enjoy this delightful spring delicacy that’s easy to make at home!
