Main Ingredients- Water parsley 100g
- Fresh oysters a small handful
- Carrot a small amount
Cooking Instructions
Step 1
First, sift 1/2 cup of flour into a bowl to ensure a smooth batter. Gradually add 1/2 cup of water while mixing. The batter should have a flowing consistency, like thick syrup. Crack in 1 egg and add a pinch of salt, then mix everything together until well combined. (If you’re using a pre-made pancake mix, it likely contains salt, so you can skip adding extra salt.)
Step 2
Tip for using pancake mix: If using a pancake mix, check the packaging for salt content. You can adjust or omit the added salt accordingly.
Step 3
Prepare the main ingredients: Wash the water parsley thoroughly. Use primarily the leafy parts and chop them into roughly 3-4 cm lengths. Thinly julienne the carrot. Gently rinse the fresh oysters and pat them dry. Add the prepared water parsley, carrot, and oysters to the batter. Mix everything gently until well incorporated.
Step 4
For a spicy kick: If you like a bit of heat, finely chopped Cheongyang chili peppers can be added to the batter. This will cut through richness and add a pleasant spiciness. Once all ingredients are mixed, your water parsley and oyster pancake batter is ready.
Step 5
Pan-fry the pancakes: Heat a pan over medium-low heat and add a generous amount of oil. Once the pan is hot, pour half of the batter onto the pan and spread it into a thin layer. Cook until the bottom is golden brown and crisp, then carefully flip and cook the other side until golden brown. The key is to achieve a crispy exterior and a moist interior. Repeat with the remaining batter.
Step 6
Serve and enjoy: Arrange the beautifully cooked water parsley and oyster pancakes on a plate. Serve them hot! For the best experience, tear them into bite-sized pieces with chopsticks and enjoy with a glass of Makgeolli. Savor the delightful combination of aromatic water parsley and chewy oysters.
