Flavorful Water Parsley Pancake Made with Seasonal Water Parsley

We’ve made a delicious water parsley pancake generously packed with shrimp meat, featuring the wonderful aroma of seasonal water parsley. Made with fragrant spring water parsley, the taste is simply delightful! This recipe highlights the fresh, green aroma of water parsley, making it a perfect savory pancake.
Ingredients- Water Parsley (leaves only) 1 bunch
- Pancake Mix 1/2 cup
- Water 1/2 cup
- Frozen Shrimp Meat 1 pack
Cooking Instructions
Step 1
Prepare the water parsley by separating the leaves from the stems. Chop the leaves into bite-sized pieces (about 3-4 cm in length) and place them in a bowl. Add 1/2 cup of pancake mix and 1/2 cup of water. Gently mix with chopsticks or a whisk until just combined, creating a slightly thin batter. Be careful not to overmix, as this can make the pancake tough.

Step 2
Thaw the frozen shrimp meat in the refrigerator beforehand. Once thawed, lightly rinse the shrimp meat in a weak saltwater solution to clean it, then drain well. Add the prepared shrimp meat to the water parsley batter and mix gently to ensure everything is evenly distributed without breaking apart the shrimp.

Step 3
Heat a generous amount of cooking oil in a pan over medium heat. Ladle portions of the batter onto the hot pan, spreading them into thin, round pancakes. Cook slowly over medium-low heat to ensure they cook through evenly and become crispy on the outside. Once one side is golden brown, flip it over and cook the other side until golden as well. Serve the fragrant water parsley and shrimp pancake hot for the best flavor and texture.
